				<description>&#060;p&#062;With lots of cold weather and snow, (it is coming down now), I have been alternating between ground beef chili and green chicken chili and hope to put tortilla soup in the rotation soon.  It includes ingredients we usually have to make a trip to the grocery store to get.&#060;br /&#062;

				<description>&#060;p&#062;For Valentine’s Day I made my husband a special dessert. &#038;nbsp;I let him choose whatever he wanted, but only gave him 15 minutes to decide. &#038;nbsp;He chose cheesecake! &#038;nbsp;I used an old recipe from a friend of my mother’s. &#038;nbsp;The ingredients said 18 graham crackers and I had to call my mother to find out what that meant. &#038;nbsp; (Is it the square? &#038;nbsp;The full cracker? &#038;nbsp;Who writes a recipe like this?) &#038;nbsp; It has a cream cheese layer, and then a sour cream layer on top.&#060;/p&#062;

				<description>&#060;p&#062;Just discovered King Arthur's gingerbread mix.  I bake from scratch, but gingerbread requires molasses, thw balance of which ends up going to waste.  So tried the KA mix for DH, a big gingerbread fan.  We both really liked it.  It was amenable to additions too - I've tried it with choc chips, and also added about half a can of leftover pumpkin.&#060;/p&#062;
&#060;p&#062;Also tried babka with apricot jam and mini chocolate chip filling.  And kolache (Czech fruit filled pastries). Photo is of the babkas.

I bought myself a slow cooker. Although until recently I did not know that such&#060;br /&#062;
a thing exists at all. I often cook chicken with vegetables. Products (for 4&#060;br /&#062;
servings): Whole chicken (without giblets) - 1 pc. (about 2.5 kg) Salt - 1 tbsp&#060;br /&#062;
l. Ground black pepper - 2.5 tsp. Large lemon - 0.5 pcs. Thyme sprig - 3 pcs. Garlic&#060;br /&#062;
(crushed by a knife handle) - 3 cloves Baby carrots - 3 cups Shallots (peeled&#060;br /&#062;
and cut in half) - 6 pcs. Dry white wine - 0.25 cups 1. Sprinkle the chicken&#060;br /&#062;
with 1.5 teaspoons of salt and 1.25 teaspoons of pepper. Put half a lemon,&#060;br /&#062;
thyme sprigs and crushed garlic inside the chicken. Tie the chicken legs with&#060;br /&#062;
cotton thread. Sprinkle the remaining 1.5 teaspoon of salt and 1.25 teaspoon of&#060;br /&#062;
pepper on top. 2. Place the carrots and shallots in a slow cooker (about 5&#060;br /&#062;
liters). Put chicken on top. Pour wine over the contents of the slow cooker.&#060;br /&#062;
Close and cook for about 1 hour. Then, at minimum power, cook for another 5&#060;br /&#062;
hours (the meat thermometer should read 85 degrees C). Serve the chicken and&#060;br /&#062;
vegetables immediately.&#060;/p&#062;

				<description>&#060;p&#062;I agree with Carla that stuffed peppers often come out better when the moisture is cooked off. In fact, in my photo you may see that mine is a bit too brown. But I like my food a bit on the over baked side to eliminate any sogginess, doughiness or tendency to fall apart.&#060;/p&#062;
&#060;p&#062;My first thought to eliminate rice, grains or bread products would be to just leave it out and make a meatloaf-like filling as Carla suggests. You could add mushrooms, lentils or beans, a variety of chopped veggies to loose brown meat, maybe make a thick ragout instead of the traditional meat and rice filling. I’d love to hear any successful combinations you come up with, Joy!

				<description>&#060;p&#062;@ Joy - I LOVE using ‘riced’ cauliflower as an alternative to carbs. It might be a little watery in stuffed peppers though. &#038;nbsp;I’d suggest omitting the rice, and just making a ‘meatloaf’ to stuff the peppers. &#038;nbsp;You could chop other veg, like onions, celery, carrots, and even the tops of the peppers - but make sure you have a good ratio of meat, and pull back on the tomato sauce so things don’t get too soupy. &#038;nbsp;A little grated cheese on top will up the protein and flavour.&#038;nbsp;

&#060;p&#062;When I bake my stuffed peppers, I leave the cover off so the liquid evaporates. &#038;nbsp;My recipe says cover for 45 min, then remove cover for last 15. &#038;nbsp;I cook for the whole hour, but leave the cover off. &#038;nbsp;It just works out better that way.&#060;/p&#062;

Do you have a recipe for stuffed peppers without rice or other grains or anything white.  Pizza crust must be very thin or made of cauliflower.  I did make the Anne Landers  Meatloaf and sometimes make an Italian meat loaf, we have both beef( red)  and Chicken (green or white) chili during the winter.

				<description>&#060;p&#062;Cjh, salads are a daily thing for me too, but I take the opposite approach—I am often not interested in making a salad when I’m hungry, so I assemble a bunch in jars ahead of time, with absolutely no whimsy. When I’m ready, I turn one upside down, shake, and dump it into the bowl. They are not glamorous or “Pinterest ready”, but they are nutritious and filling, so contain the embers of long-term joy.

&#060;p&#062;&#060;div&#062;&#060;br /&#062;&#060;/div&#062;&#060;div&#062;As to motivational tips, perhaps it can be boiled down to a few clear strategies. But you guys know, I’m not short winded, so you may regret asking.&#060;br /&#062;1. Follow the old fashioned meal plan to include protein, starch and at least two veggies. Not too many desserts.&#060;/div&#062;&#060;div&#062;2. Usually cook “from inventory,” - my grocery list is fairly standard, and I creatively use up what I have, including reinventing or combining leftovers for another meal. I have a stock of ingredients, but not overstocked - just contains the variety I need.&#060;br /&#062;3. I really like making salads, and my own dressing. I rarely use bottled salad dressing, just make enough for whatever salad we’re eating. No recipes are needed after you get some practice.&#060;br /&#062;&#038;nbsp;If you had a head of red leaf lettuce, a Roma tomato, a jar of Kalamata olives, a red bell pepper, celery, a red onion, carrots, grapes, an orange and an apple, pecans, a bunch of green onions, some dried cranberries, olive oil, red vinegar, lemon juice, mustard, brown sugar, Italian seasoning mix, garlic powder, salt and a pepper grinder, that would be enough for salads almost every night for a week, and no day would be a repeat. Of course, you can add or subtract: why not get a zucchini, radishes, or avocado? Maybe a pear, blueberries, or mango?&#038;nbsp;&#060;/div&#062;&#060;div&#062;These items, plus bananas, a couple of potatoes, sweet potato, and occasionally spinach, cabbage, or spring lettuce mix are on my list every couple of weeks. I supplement these with frozen veggies, and there is no reason not to have the two-three servings of fruits and veggies each meal.&#060;br /&#062;3. I kind of do the same with meats. The standard choices are ground beef, chicken breasts, ham slice, ground turkey, boneless pork chops, tilapia, salmon, and I use small portions of bacon and sausages. With these in the freezer, I can make anything.&#060;br /&#062;4. Pantry staples are canned goods like chopped green chilies and salsa; soy sauce, sweet Thai chili sauce, water chestnuts and ginger; jarred spaghetti sauce, pasta and Parmesan cheese; rice, canned mushrooms, beans and various tomato products. Lots of spices. Always have eggs, shredded and block cheeses, sour cream, butter. Tortilla chips, tortillas, crackers. If I don’t make rice, pasta, polenta or another starch, we have bread and butter.&#060;br /&#062;5. Portions that won’t be used are often frozen. Most important factor here: LABEL! I use a small strip of paper, write the item or dish name, month and year, and then tape&#038;nbsp;it on with scotch tape, covering the entire paper label with strips of tape. My scissors, notepaper, pen and tape are in the kitchen drawer right by the fridge, so no excuses.&#060;/div&#062;&#060;div&#062;&#060;br /&#062;&#060;/div&#062;&#060;div&#062;Then to meal plan for the next several days, I write a list of what sounds good, and I know I can make usually starting with produce because that is hardest to keep, without defining any meal for any particular day. At some point, I have to decide, today’s the day for .... sweet potatoes and pork chops. Oh yeah, I have an apple and onion, I’ll make that sheet pan recipe. And salad with oranges, green onions and pecans sounds good with that. Or ... chili might be good, and I have ground beef. There are cans of beans, crushed tomatoes, cheese for topping. And some grapes on the side, or maybe mix grapes, blueberries and cut up that last pear, tossed with a squirt of honey, lime juice and a sprinkle of ginger or cinnamon.

&#060;p&#062;You, too, my friends, can eat simple, balanced, filling meals. Stock your cupboards, pick simple-to-cook dishes that you like, load up on produce and EAT all of it. Experiment with new dishes that require different ingredients once in awhile but don’t try it every night.&#038;nbsp;&#060;/p&#062;
&#060;p&#062;&#060;/div&#062;&#060;div&#062;&#060;br /&#062;&#060;/div&#062;&#060;div&#062;Oh, if you hate making salads, buy the kits, or bins of spring mix and precut veggies and bottled dressing. &#060;p&#062;I do record our evening meals every day, often with photos, too. So here are my favorites from January, 9 and 10 being superb. They aren’t gourmet, vegetarian or exotic by any means. I am pretty intentional about including veggies, color, lots of seasonings and balance in textures to fill our plates and senses.&#060;/p&#062;
&#060;p&#062;1. Swedish meatballs and noodles, butternut squash, salad with fruits, corn bread, homemade mustard-brown sugar salad dressing&#060;br /&#062;2. Stuffed bell pepper, corn, clementines&#060;/p&#062;
&#060;p&#062;3. Turkey a la King on “everything” waffle, tomato, cranberry sauce&#060;/p&#062;
&#060;p&#062;4. Homemade pizza on refrigerated crust, big salad&#060;br /&#062;5. Nachos, made with leftover stuffed pepper filling&#060;br /&#062;6. Chicken veggie stir fry with rice, cranberry sauce&#060;br /&#062;7. Spaghetti with “toasted” hamburger bun, mixed veggies&#060;br /&#062;8. Spaghetti bun, coleslaw, sweet potato fries&#060;br /&#062;9. Sheet pan pork chops, sweet potatoes, apples and onions&#060;br /&#062;10. Chicken thighs and smashed peas, spinach salad&#060;br /&#062;11. Fish sandwich, bbq beans, coleslaw&#060;br /&#062;12. Homemade vanilla pudding with clementines and coconut&#060;br /&#062;13. Ham and Swiss pinwheels, coleslaw&#060;/p&#062;

Basically, we like anything wrapped in puff pastry in my house  <span aria-hidden="true" class="emoticon emoticon-smile icon-emoticon-smile "></span>  All the recipes call for a filling of spinach and onion... I guess filling a mushroom with mushrooms doesn’t add anything, lol. I also included pâté - so not vegan, but I dare say it could have been a vegan pâté!
