FI, Here is a recipe that I think tastes a bit like KFC*

https://www.familycircle.com/r.....d-chicken/

I made it at home using my homemade gluten free breadcrumbs instead of panko, and I think I used less honey than the recipe says.

*Not that I've eaten KFC for maybe a decade!

I can't remember if I posted my purple okinomyaki (ish) [japanese cabbage based pancake] on another food thread. This was one of those "eat what is left in the fridge the day before shopping day" things, and I had half a purple cabbage. Such a vivid colour!

We hosted Easter brunch with our extended family and one of the favorite new things we made was a smoked salmon quiche with goat cheese and dill in puff pastry crust. Store-bought puff pastry is super easy to work with and delicious and I think smoked salmon may be my favorite food. It was heaven on a plate. Along with it we had mustard-brownsugar glazed ham, salad with red grapes and candied walnuts, sliced honeydew and blueberries, cinnamon coffee cake, lemon-basil carrots, sautéed brussels sprouts and mimosas. Hallelujah! He is risen!

FashIntern, one of my favorite ways to serve chicken is skinless, boneless thighs pounded flat (in a ziploc bag), marinated briefly (1/2 hour) in Worcestershire sauce, and then grilled. Thighs are juicier than breasts, so I think your son would probably like it.

Fashintern, in the same boat as you with a meat loving son. I have heard a lot of good things about Kenji-Lopez’s fried chicken. Warning: comes with a side of politics.

Recipe request for carnivores.

I’ve been vegetarian since college, so never really learned to cook meat. My son, however, has not chosen to be vegetarian (yet). I’m learning to cook meat for the first time.

He likes very plain chicken—skinless breasts baked or fried in olive oil with a bit of salt. But he also likes KFC, a lot. I’m looking for a good recipe that isn’t too involved, or too spicy, and that is well-tested. Can anyone here help me out?

Food looks delicious, Cjh, but the 'burger 'takes the cake'! LOL!

Fashintern-pesto = Yum! I used the last of the 2018 pesto in spaghetti sauce today. When I had more than I could consume, I froze it in ice cube trays for wintertime use.

Your flower cookies are lovely, Carla. I like to cook but don’t enjoy baking much, so we get cookies occasionally from my mother in law. Though I did make heart cookies this year! Yay, me!

We’ll have chef salad tonight with Easter eggs, chopped ham, shredded cheese and all the veggies in the fridge.

For Easter, I made ham (easy- just slice, stir together maple syrup and seedy mustard, pour over and heat), cheesy mashed potato casserole, and fresh sugar snap peas with orange marmalade ginger butter. Along with baked beans, strawberry salad, dinner rolls and angelfood cake, we had a filling and festive meal at my in-laws’. No photo.

Some other meals at home lately include Italian beef nachos with mozzarella cheese, guacamole; pork chop, baked potato and three bean salad; leftovers of taco casserole, pizza bread and three bean salad; Parmesan chicken with butterfly noodles, green salad and garlic bread. The last photo is my grandson who just turned 6 with the “hamburger” cake made by his mom, my daughter. She’s so creative.

I wish I had taken a picture, but we barbecued chicken last night, and had roasted cauliflower and asparagus. Delicious and healthy. Then we had a few Girl Scout cookies. Oh well.

That soup sounds satisfying, and your eggs & their presentation are beautiful.

I’m hanging my head a bit—Easter bunny was supposed to hang a hammock and leave a small basket with just a little candy in it. Unfortunately, the neighbor I planned to borrow the drill from has lent it out to a friend waaaaaaaay on the other side of town. I’m trying to decide if a half little presentation of basket without hammock is better, or if I should just wait til the store where I can rent a drill opens on Tuesday.

Not the greatest food shots, but I was happy my little basil pot could be harvested to make pesto (we just moved in last month).

I’m just getting back to a high protein diet. One road bump is the price of scallops. In the US, I could get a bag of scallops at a price that broke down to ~$3 per 6 oz serving. They were small Bay or Patagonian Oysters. I haven’t been able to find them here, just the big guys sold fresh from the fishmonger. They are very tasty, but cost too much to be lunch several times a week. I’m a vegetarian, so am scrambling for other options. Whey powder, for sure, but I need other ideas too.

Combining the themes of paragraphs 2 & 4, does anyone have a recipe for high protein cupcakes or muffins? I’ve found some online, but always trust recipes from “real” people more. I have plans for a couple cute ways to frost them.

This came from a restaurant but it's dates stuffed with I think marscapone and with basil on the side :)
No pic, but I've been making carrot spiral noodles with Trader Joes bruchetta as the sauce often. DH loves it! And I've been subbing riced cauliflower for rice in my beans and rice. Less carbs and calories, and much quicker to cook! #lazyhealthy

Not quite my cooking, but DH cooked, a delicious Ottolenghi recipe for cauliflower omelette, a few days ago, which was even better the following day, and then yesterday amazing little Italian biscuits with almonds. A Breadahead recipe.

Those cookies look so pretty RunCarla.

This year, DH and DS had Easter presents in my papermache balloon eggs. Bit rushed this year, but broadly worked. I treated them to Lululemon t shirts, both of which were a hit, tucked into the eggs.

Today was a cold and rainy day, so I made a soup in the crock pot. A meaty old ham bone, carrots, celery, onion, corn, potatoes, home made turkey stock, thyme from the garden. Later a few grinds of pepper and a cup of cream. Served with home made bread. #1

Made cookies for Bridge Night and decided a spring theme was in order. #2

While visiting Mom this week, I took a break from doing paperwork for her and visited a little patisserie right next door. A good coffee and a Creme brûlée. #3 (I have a hectic sweet tooth, like Angie - LOL!)

Easter wouldn't be Easter without coloured eggs and chocolate. I use blue food colouring for the eggs and sponge them with a little gold craft paint 4-5.

So? What have you been cooking? Or eating? Tried any new recipes recently? Please post photos of what you are eating and what is inspiring your cooking.
