I don't have pics but have made some lovely sea scallops lately - simple seared in butter and served with a cous-cous that has sauteed onion, red bell, celery, carrot and garlic with a few dashes of Old Bay seasoning and clam juice instead of water. That with a very simple green salad is a favorite and I always have leftover cous-cous so I use that the next day for a faux paella by adding some roast chicken and maybe a little smoked sausage and a bit of saffron.

I roasted some butternut squash to make soup tonight. Soup and salad is one of my all time favorite things to eat. DH likes toasted cheese with his soup so I make that with pepper jack and aged cheddar and add a little arugula to mine when it's done.

Making myself hungry now.

I’ve been so low on ideas - that and I discovered the potato button on the microwave. I’ve been making potatoes, which I rarely used to do. Leeks, potatoes and a protein, I’m subsisting off of them.

Very yummy! That reminds me I should make pad Thai someday soon. We have had pork/black bean/butternut squash chili recently, and chicken pot pie tonight.

Photos show pumpkin muffins (gritted my teeth and made them - I hate to bake), veggie egg casserole and toast, ham with butternut squash and pear salad, sheet pan fajita filling, all home cooked. The last photo is delicious shrimp and grits I had for lunch at Chicago Art Institute a few weeks ago.

It's been a while, but now with the weather turning colder I'm happy to return to the kitchen. However, no food pics from my kitchen yet - instead photos from a recent night out for Tai food! What have you been making? Or Eating? Post your pics here!
