				<description>&#060;p&#062;Here is a really good condiment for Jules' fish tacos. When we had our three long-term covid houseguests (all ravenous young men), I started making this in a large squeeze bottle because they put it on so many things.&#060;/p&#062;
&#060;p&#062;Fish Taco Sauce&#060;/p&#062;
&#060;p&#062;Whisk together:

&#060;li&#062;1/2 cup sour cream&#060;/li&#062;
&#060;li&#062;1/3 cup mayonnaise&#060;/li&#062;
&#060;li&#062;2 Tbsp lime juice, from 1 medium lime&#060;/li&#062;
&#060;li&#062;1 tsp garlic powder&#060;/li&#062;

				<description>&#060;p&#062;I’ll throw in a suggestion for an easy dinner - fish stick tacos. I buy frozen battered fish for this, we like the tempura or beer batter ones. You can use corn tortillas for tacos or wheat tortillas for a burrito. It can be as simple as a fish stick, shredded cabbage, tartar sauce and sriracha, and add a squeeze of lime if you have some - or add thinly sliced bell pepper, green onion, guacamole, salsa of your choice… for me it’s the fish/tartar sauce/hot sauce/cabbage combo that makes it.

				<description>&#060;p&#062;Fried rice is a favourite of ours as well, I always make extra rice when doing stirfry or rice bowls so we can have leftovers. A couple of tips: store the leftover rice uncovered so it dries out a bit more and won’t be as clumpy; I also discovered my cast iron frying pan is the best cooking vessel to get some crispy brown bits!! It’s a great way to use up leftover bits of veg and meat (even things like ham or sausage - maple flavoured breakfast sausage works surprisingly well, or try kimchi bacon fried rice. I have even used a hot dog!), plus add a couple of eggs. My family likes it as much as many fancier meals!

				<description>&#060;p&#062;Hmmm. Pizza, salad = pizza and salad. One term that I use which is oddball and possibly unique to me is finger salad. That means cut, raw veggies such as carrot sticks, celery sticks, cherry tomatoes, bell pepper strips, cucumber slices, pickles and olives.&#038;nbsp;&#060;/p&#062;
&#060;div&#062;&#060;br /&#062;&#060;/div&#062;&#060;div&#062;I’ve made four dinners off my list already, and had two nights of leftovers. Here are photos. Potato soup, ham and macaroni, tilapia sandwiches, taco salad. Side dishes vary a bit from the original plan, especially in a leftover meal. Taco salad in front of tv because we’re watching basketball. I am not a gourmet cook but I try hard to have a variety of fruits and veggies every day, colorful and simple.&#060;/div&#062;&#060;/p&#062;

I see these as simple to prepare, made with pretty basic ingredients I have on hand. If we end up having company, I might switch something to a little fancier version or just add a nice dessert.&#060;/p&#062;
&#060;p&#062;Tilapia sandwiches, fruit salad, baked beans&#060;br /&#062;Taco salad, apple sauce&#060;br /&#062;Ham and Swiss pinwheels, coleslaw&#060;br /&#062;Cheese tortellini with sauce, salad&#060;br /&#062;Potato soup, apple salad&#060;br /&#062;Smoked wings, finger salad (cut raw veggies), chips and dip (Super Bowl day)&#060;br /&#062;Chili, cheese and crackers, carrot sticks&#060;br /&#062;Chicken fingers, corn, salad&#060;br /&#062;Ham, Mac and cheese, veggies or salad&#060;br /&#062;Pizza, salad&#060;br /&#062;Grilled salmon, baked sweet potato, green beans&#060;br /&#062;Burgers, corn, raw veggies&#060;br /&#062;Pad Thai - stir fry pork and veggies with rice noodles, cranberry sauce&#060;br /&#062;Chicken chili and rice, chips and guacamole&#060;br /&#062;Sheet pan pork chops, onions, apples and butternut squash&#060;br /&#062;Meat loaf, mashed potatoes, broccoli&#060;/p&#062;
&#060;p&#062;That equals 16 meals, which will provide leftovers for at least 8-12 more days, plus we will go out to eat a few times. Often the type of veggie or salad isn’t specified because there are leftovers to include.&#060;/p&#062;

(I did Dry January and it was interesting how my cooking rose in inverse proportion to my diminished wine drinking!)&#038;nbsp;&#060;br /&#062;I usually leverage NYT Cooking heavily for my recipes, but my sister shared a good recipe with me from The Forked Spoon for a pho-type soup that is really delicious, and serves as a great base for modifications at will.&#038;nbsp;&#060;br /&#062;&#060;a rel=&#034;nofollow&#034; href=&#034;https://theforkedspoon.com/ginger-garlic-noodle-soup-with-bok-choy/&#034;&#062;Ginger Garlic Noodle Soup with Bok Choy&#060;/a&#062;&#060;br /&#062;I initially dismissed it out of hand when she told me about it because I am not a huge garlic fan, so anything with &#034;garlic&#034; in the title is a warning sign. But, she made the soup with 1/3 of the indicated garlic when she served it to me, and it was amazing. I love bok choy, and plan to cook with it more often this year. I also love ginger, and this is ginger-forward.&#060;/p&#062;
&#060;p&#062;We live in a town that has a huge and diverse Asian population and we get amazing Chinese, Vietnamese, Japanese, Thai, Korean and other take out, including pho, so it never occurred to me to seek out a soup recipe like this. But, we also have a plethora of Asian grocery stores so I was able to get all of the ingredients, even the star anise! It's a fun experience to shop there - there are full aisles of just rice noodles!&#060;/p&#062;
&#060;p&#062;My modifications include:&#038;nbsp;&#060;br /&#062;- much less garlic&#060;br /&#062;- chicken broth&#060;br /&#062;- 1/3 of the star anise that is called for (I used 2, for 6 servings)&#060;br /&#062;- more mushrooms, of different varieties, just because I love mushrooms&#060;br /&#062;- 1/2 lb of shrimp&#060;/p&#062;
&#060;p&#062;It took longer than the indicated 5 minutes to prep, but it was only about 30 minutes in total. And it's great to just throw the rice noodles (and, in my case, raw shrimp) in at the end to cook in the broth instead of needing a separate pot.&#060;/p&#062;

&#060;p&#062;We eat ALL leftovers! So we can eat the same thing for a couple of days. Or I make a new dish with the leftover food. Sometimes not in a row though, so there's variety. We can't stand wasting food. So aiming for zero food waste is a big deal in our castle.&#060;/p&#062;
&#060;p&#062;I love to cook, so there is lots of meal excitement in our home. But not enough variety for this challenge! For example, we have six types of salads that accompany most of our main meals - we rotate through the salads for variety - so there is always a salad repeat. And when we fall in love with eating something, I make it again soon. At the moment we're frequently having a hot Caesar salad as a starter to our main dinner meal because it's soooooo yummy!!! I braise the romaine and the dressing is made from scratch. I served it as a starter at a dinner party last week, and it was a hit  <span aria-hidden="true" class="emoticon emoticon-smile icon-emoticon-smile "></span>

				<description>&#060;p&#062;I will follow with interest, although this is a chaotic month for me so I cannot join. Disrupting the dinner rut is such a worthy challenge! I just want to add to what Stays fit said and say that Isa Does It is my very favorite cookbook and I am not vegan. It has added a lot of variety and deliciousness to my life. The problem is that the recipes are so good I'm prone to repeating them now!

				<description>&#060;p&#062;That sounds like fun. &#038;nbsp;I admire your effort as it is more challenging and time consuming to prepare new recipes than something familiar. &#038;nbsp;When my children lived with us, we picked a weekly theme…a city, country, time in history or maybe a book someone was reading and then we prepared a meal based on that theme. &#038;nbsp;What sort of recipes/foods are you planning to make? &#038;nbsp;Currently hubby and I follow a WFPB diet. I would be happy to share some recipes if you let me know what sort you would like? &#038;nbsp;Do you like pasta dishes, salads, casseroles, a specific type of cuisine? &#038;nbsp;Do you have a favorite vegetable? &#038;nbsp;A favorite spice or flavor profile? &#038;nbsp;I can offer suggestions of a few resources where you can find tasty WFPB recipes your family might like. &#038;nbsp;If you have access to a Library with cookbooks, I suggest both Isa Does It by Isa Chandra Moskowitz and Forks Over Knives the cookbook by Del Sroufe. &#038;nbsp;Everything we have made from these two cookbooks has been excellent, and we have used them often and for many years. &#038;nbsp;Another nice cookbook is The First Mess by Laura Wright. &#038;nbsp;It’s newer to me and I find her recipes a little more complex to prepare but so far, always worth the effort. &#038;nbsp;A website we return to frequently is the minimalist baker. &#038;nbsp;Hubby and I started using the Forks over Knives meal planner in late December 2024, which includes a generous number of recipes for the week. It’s behind a paywall. &#038;nbsp;I did it to add variety to our weekly menus, which it has, although we don’t set up the menus to give us something different every single night. &#038;nbsp;We make use of leftovers a couple days a week due to time constraints. &#038;nbsp;It’s already a challenge to add more variety using the meal planner because we are making more entrees than before and most of the recipes are new to us, so that is where we will join you….maintaining our current effort so we don’t slip back into making only 2 or 3 entrees on the weekend and repeating them all week! &#038;nbsp;:-) &#038;nbsp;
