We have several favorites for those evenings where dinner at home consists of charcuterie et format with a nice bottle o wine. One of local favorites is one from Mt. Townsend creamery in Port Townsend, WA. It's a soft ripened cheese with truffle infusion, yum! http://www.mttownsendcreamery......ufflestack
We also love our Murray's 'drunken goat' cheese from the Murcia region of Spain. http://www.murrayscheese.com/drunken-goat.html#

And for something completely different, Cotswold is a yellow cheese with chives and onion in, that is decadent on a baked potato! http://www.cheese.com/cotswold/

Now I'm gonna have to hit the fridge...great

For some reason I have been thinking about cheese a lot lately!

When I was in the UK in May, I tried a few amazing cheeses at Neal's Yard Dairy. I haven't been able to find them all in the US though.

Lincolnshire Poacher is one that you can get here; it kind of tastes like a cross between Gruyere and Cheddar:
http://www.formaggiokitchen.co.....ts_id=1993

At Borough Market in London there's a stall that sells Raclette (melted cheese on potatoes basically) made from a Neal's Yard Cheese called Ogleshield. It was *amazing*. (See the photos below!) Unfortunately I haven't been able to find it in the US too.

If you like blue cheeses, Stichelton is (I think) the only raw milk blue in the world. I don't even like blue cheeses and I like this one (in moderation).
http://www.formaggiokitchen.co.....ts_id=1937

Mmmm... cheese...

My absolute favorite cheeses are probably the Alpine cheeses, Comte, Gruyere, etc. I also really like a good English cheddar, a French Pave d'affinois, nutty parmigiano reggiano, etc, etc. So hungry now.

A really good local cheese in New England is Cabot Clothbound Cheddar.
http://www.formaggiokitchen.co.....ts_id=1792

(Also I live within walking distance of Formaggio Kitchen. You can imagine how tempting that is, like, all the time!)

I LOVE cheese and celebrated National Cheese Lover's day in January. One of my favorite "holidays". : )

Cheese has always been a huge part of my life because it is a very big part of my culture : Azorean ( Portuguese ). We gift cheese. Whenever our family visits from the Azores or we go to visit, we receive a lot of cheeses. My husband, who is American, is utterly confounded by this.

I have so many favorites.

My top cheese is from the island of São Jorge in the Azores. It is a hard cheese that reminds me a little of gruyere, but milder.

I also love cheese from Pico, Azores

I have just learned to enjoy Camembert . That took a little while. I found it very plain...but then I just loved it with crackers and tea. Mmmmm

I absolutely love Gruyere and often mix that with a milder cheese for a grilled cheese sandwich.

Brie, Parm, and Fontina.

Recently, I tried goat cheese with blueberries ( Ok, probably won't buy again) and Havarti with dill....which I really disliked.

I actually like "stinky" cheeses quite a bit !

I live in Wisconsin. There are soooo many made by small farms you can get at gourmet stores and farmers markets . . . most don't ship though.

Every year one of the local cheese shops (yes, there's more than one ) stocks all of the regional cheeses that won national championships as well.

annagybe: How fun! Love your personal connection, your alma mater. My list is growing with all these great suggestions. And have to check out Marin brie. Thanks for some new names.

Kiwigal: I am looking forward to taking this full list to my cheese stores and making inquiries. Are you familiar with Roaring Forties Blue? That's from your neck of the wood and again, they have stopped shipping to the states. This was my DH's favorite blue. And I love, love cheese.

I doubt any brands I recommend would be available in the US. I love creamy blues (Kikorangi), I love Haloumi, and I adore a proper artisanal soft brie style cheese.

Marin brie is VERY good for an American product.
http://www.marinfrenchcheese.c...../classics/
But I have to do a shout out for my alma mater.
http://cougarcheese.wsu.edu/

One of my favorites is a cheese that, unfortunately, I don't get to eat very often because I've never seen it in the US. It's a Portuguese sheep's milk cheese called Serra da Estrela (after the region where it's made, the Estrela Hill Range).

It is round with a firm, dry, yellow rind. You slice off the top and inside there's a creamy, ivory-colored filling (the rind works as a "bowl"). You spread it on cheese, or spoon it in recipes. (Or eat it off the spoon.)

The taste is amazing. It is very intense and umami, assertive without being funky (I'm not a fan of pungent cheeses). I would say it is a cream cheese, but with personality. Very rich, not tangy. I used to eat it back home in Brazil.

If anyone finds this here in the US, please let me know!

Several years back we got into cheese. There was a hurricane coming and we bought a cheese book and some cheeses -- to hunker down for the duration. Cheese has now become a significant source of pleasure for us. We haven't added many new cheeses to our repertoire so I thought I would put this question to you.

Here's our favorites:
- Roaring forties blue cheese (not sold in the states any more so we have replaced with Rogue River blue cheese)
- Humboldt fog goat cheese
- Midnight moon goat gouda
- Delice de Bourgogne
- Rubusto cheese
- BellaVitano gold cheese
