				<description>&#060;p&#062;Love this thread!  I can't wait to try your dressing.  I've done something similar but not with the soy sauce and love that addition.&#060;br /&#062;
In order to have roasted veggies and not heat up the oven we throw them on the grill and make extras when grilling anything.  I have a wok with holes in it and a finer mesh flat piece that both work for smaller or chopped veggies.  Besides the usual peppers and summer squashes and onions, we grill slices of beets, slices of sweet potatoes, asparagus, peach halves, corn on the cob, etc.  I just toss or brush them in a little olive oil first and sometimes sprinkle on herbs.  Extras cold are wonderful added to salads.&#060;br /&#062;
We also bake bread and make pizza on our basic, nothing fancy grill.

				<description>&#060;p&#062;Ooh--I'm making a big list of all these ideas!  I think we might eat salads for dinner for the next few weeks!  I love salad for dinner in the summer.&#060;/p&#062;
&#060;p&#062;Shiny, for the pecans, I soak raw pecans (I try to avoid roasting nuts when I can because it destroys a lot of their nutritional value) overnight and then drain, rinse, and toss with honey and a bit of spice--I like chipotle chili powder and salt.  I LOVE the sweet/salty/spicy combo.  Then I dehydrate for about 24 hours in my dehydrator until they are sticky but the nuts inside are dry.  You could just coat any regular pecans and roast them in the oven though, I bet!  Super easy.  I just finished mine and need to make some more.

&#060;p&#062;Peppadews are tiny sweet and hot peppers. Delicious! They are best jarred or fresh from the delicatessen. &#060;/p&#062;
&#060;p&#062;Try steaming corn and edamame and putting those into the salad once they are cold. KILLER. Red beats and gorgonzola is a win. So is pear with gorgonzola.&#060;/p&#062;
&#060;p&#062;Olives I like to serve on the side. They are wasted in a salad and deserve pride of place all on their own!&#060;/p&#062;

&#060;p&#062;I totally agree about toasting the seeds and nuts, and about using Roma tomatoes (assuming there's no fresh-grown tomatoes in the garden on the vine), and about throwing in fresh herbs. Also agree about the frisee - although around here you can only seem to buy it in a pre-washed spring salad mix for some odd reason. Not that I'm complaining - saves time. &#060;/p&#062;
&#060;p&#062;Brianna - that salad sounds awesome; how do you make your own honey-glazed pecans? Just coat in honey and toast? Or is there more to it? &#060;/p&#062;
&#060;p&#062;Inge - for roasted veggies, a few times a week I toss veggies (green beans &#038;#38; asparagus I did just tonight) with a little olive oil and sea salt, spread on a cookie sheet, and roast at 375 degrees for about 20-30 minutes. I make enough for dinner AND for cold salads for a day or two afterwards. Nothing could be easier. Roasting is my favorite way to cook veggies. &#060;/p&#062;
&#060;p&#062;You can also throw in some whole garlic cloves - and even nuts - on the same cookie sheet and roast it all together if you like. Squeeze the garlic cloves and mush them with a fork and toss with the veggies, and let sit in the fridge to marinate overnight. It makes salad assembly the next day incredibly easy. &#060;/p&#062;
&#060;p&#062;Capers! Capers are great in salads if you like a salty punch! And olives too... I love olives of all kinds.

				<description>&#060;p&#062;Mmm... I love roasted veggies in salads. Beets, eggplant, onion. Beets and hard-boiled eggs are a nice combo. Add a crisp, mellow lettuce and some creamy dressing.&#060;/p&#062;
&#060;p&#062;Taco salad -- I love guacamole! You can also layer with yogurt, beans, tomatoes. Mixed together, I don't think it really needs a dressing, per se.

They tend to be green at the beginning of summer, and then go to hard vegetables (like fresh tomatoes, green beans, fresh runner beans) at the height of summer, and back to green at the end. It is too hot here in the summer to grow lettuces. &#060;/p&#062;
&#060;p&#062;I grow lettuces and greens in my garden. I like to add baby chard and kale in with my arugula/rocket and other lettuces. I also love a nice goat cheese mixed in.

&#060;p&#062;Rocket (arugula) and lamb's lettuce are my two favourite types of salad. Spinach is lovely too, and I agree, frisée is great for it's 'dressing holding properties'.&#060;/p&#062;
&#060;p&#062;I hadn't heard of peppadews either. I'm going to see if I can find them here.&#060;/p&#062;
&#060;p&#062;Roasted seeds are always good, sometimes I throw in some raisins for a sweet touch too. And I love fresh fruit in a green salad (try halved grapes some time too, berries are very refreshing as well)!&#060;/p&#062;

And Angie, do tell us more about cheese pretty please. I haven't been very adventurous cheese-wise up till now, and I want to branch out;-)&#060;/p&#062;

My current favourite is mixed greens with roasted peppers, avocado, honey-glazed pecans that I make myself, a scattering of strong cheese (asiago works well) and a chipotle maple dressing from the ReBar cookbook (a must have for all vegetarians, I might add).  This salad is based on the Painted Desert Salad in that cookbook.

&#060;p&#062;o	Get to know different lettuce leaves. Mix lots of different lettuces and herbs together – add fresh, dill, tarragon and coriander too (cilantro to you guys).&#060;/p&#062;
&#060;p&#062;o	Use water cress and spinach.&#060;/p&#062;
&#060;p&#062;o	Frisee (do you know that French lettuce?) It MAKES a green salad in my opinion. I like it mixed in because the dressing clings onto the shape of the leaves in the best way – explosion in your mouth.&#060;/p&#062;
&#060;p&#062;o	Use tiny roma tomatoes and slice them up. From Mexico and Israel are best. They are tastier and they don’t spread out all over the salad. I can’t bear that. &#060;/p&#062;
&#060;p&#062;o	Think out of the box and add ROASTED and salted pumpkin seeds, soy nuts and ROASTED pine nuts and almonds. Roasting them makes all the difference. &#060;/p&#062;
&#060;p&#062;o	Strawberries and peppadews are fab&#060;/p&#062;
&#060;p&#062;o	Edamame is another favouritre.&#060;/p&#062;
&#060;p&#062;o	Experiment with different types of avocado – some are nuttier than others.&#060;/p&#062;
&#060;p&#062;o	Think about your salt. At the moment I’m into adding coarse Peruvian Pink salt. Really adds flavor and texture. &#060;/p&#062;
&#060;p&#062;o	Cheese – where do I start!!! &#060;/p&#062;
&#060;p&#062;Once you have these variations going, the possibilities  are endless. And I haven’t begun to add roasted vegtables, protein and bread.

				<description>&#060;p&#062;I hate bottled dressing too - too many chemicals, too much sodium, and doesn't taste very good either. &#060;/p&#062;
&#060;p&#062;Usually I just mix up balsamic (best quality I can find - better quality won't need any sweetening) with olive oil (best quality I can find), and keep it in a cruet. Sometimes I add dijon, sometimes I'll add garlic cloves, sometimes fresh basil from the garden. &#060;/p&#062;
&#060;p&#062;But I don't put it in the fridge, because the olive oil will solidify. Also it just tastes better at room temperature! I've never had any problem leaving a cruet out on the counter for weeks on end. Of course our kitchen doesn't get a lot of direct sunlight, which can quickly spoil olive oil. &#060;/p&#062;
&#060;p&#062;Honey: I mix honey, olive oil, and balsamic up and then nuke it to warm it up and pour over a salad I make with spinach, red onions, strawberries, and slivered almonds. &#060;/p&#062;
&#060;p&#062;If you're looking for good olive oil, try the wine store!

				<description>&#060;p&#062;Mmmm yumn, I am addicted to both balsamic vinegar and rocket!!  Amazingly enough I have managed to keep some rocket alive for over a month now, so I've got a pretty constant supply right now!!&#060;/p&#062;
&#060;p&#062;I made a similar salad dressing, but use brown sugar and wholegrain mustard instead of the honey and dijon.  Still very yummy, so I'm sure this one tastes great tooo!!!

&#060;p&#062;Another nice option, for those who are interested, is basically the exact same thing, but sub in fresh squeezed lime juice for the balsamic. It's a touch more Asian in flavour, but essentially the same idea. I make it a lot in the summer!
