We sliced some up and froze them to use in pies later or just to fry on the stove. Others we put into a drier and made dried apples. I happen to have a juicer, so we juiced some of the apples and canned the juice. We ate three apple pies and had some fresh apple sauce. I think a bright turquoise works best with that green, but blues look very nice with greens so other shades might work too.
