I'm a fan of both Asian and English tea rituals (yes, it's a ritual). But I grew up with typical Indian tea, which is black, strong, with or without spices, and milk and sugar, so that is always my "go-to" tea. I always find it funny when people say "chai tea" because they're really saying "tea tea"--all tea is chai! But a while ago I bought a package of white pearl tea. White tea is the rarest and most expensive but I just had to try it, so I paid the $8 and gave it a shot. The tea leaves are rolled into little balls, and when hot water is poured, they open up.
