&#060;li&#062;240g butter or margarine&#060;/li&#062;
&#060;li&#062;2 cups raw sugar (can substitute with caster or white)&#060;/li&#062;
&#060;li&#062;1/2 cup cocoa&#060;/li&#062;
&#060;li&#062;4 eggs&#060;/li&#062;
&#060;li&#062;2 cups gluten free plain flour&#060;/li&#062;
&#060;li&#062;1 teaspoon bi-carb soda&#060;/li&#062;
&#060;li&#062;1 teaspoon vanilla essence&#060;/li&#062;
&#060;li&#062;pinch of salt&#060;/li&#062;
&#060;ol&#062;
&#060;li&#062;Mix in 1/2-3/4 cup of any of the following, if desired: berries, jersey caramels, chocolate chips, walnuts or peanuts.&#060;/li&#062;
&#060;li&#062;Preheat oven to 180 degrees celcius, 160 degrees if fan-forced&#060;/li&#062;
&#060;li&#062;line a large baking dish or two 25×25 square pans with baking paper&#060;/li&#062;
&#060;li&#062;Melt margarine in glass jug or saucepan&#060;/li&#062;
&#060;li&#062;In a large bowl, combine sugar and cocoa, mix in melted butter, eggs, vanilla and salt.&#060;/li&#062;
&#060;li&#062;Sift bicarb soda and flour together and fold into the mix. Beat the mixture well by hand or with an electric mixer.&#060;/li&#062;
&#060;li&#062;Pour into tin/s and bake for 25-30 minutes, though start checking earlier. It should fee; ‘just set’ on top. Remember: it will continue to cook as it cools, so don’t overcook.&#060;/li&#062;
&#060;li&#062;Cool in the tin and serve by itself or with cream, icecream or raspberry sauce.&#060;/li&#062;

				<description>&#060;p&#062;Because gluten-free baking can be expensive (for instance, you have to buy an $8 bag of potato starch, $5 bag of tapioca starch, $6 bag of rice starch, $14 box of xanthum gum) etc. and use 1/2 cup of each and a quarter teaspoon of the xanthum gum....so you end up with about $35 in ingredients for about 24 cookies -- ingredients you will never use again. I would suggest you look for a good box mix for gluten-free products. I like both the Glutino and Bob's Red Mill brands of pre-mixed items such as brownies, etc. You will need to check the ingredients boxes for soy/lecithins.&#038;nbsp;&#060;/p&#062;
&#060;p&#062;It is kind of you to try to do this because gluten-free cooking is challenging for folks who do not have to live it as a permanent lifestyle. &#038;nbsp;And a warning: Sometimes, GF people will not eat items made by others because the kitchen can have contamination issues (such as wheat flour residues on pans, cutting boards, spatulas, etc., not germs!). So even if you go the extra mile effort, the food may not be eaten. This can be very disappointing to the person who did the baking.&#060;/p&#062;
&#060;p&#062;If you have access to a popular, trusted gluten-free bakery, you may be better off buying some gluten-free items for your guests who need that rather than home-baking them. As a person who needs to eat gluten-free, I am sometimes embarrassed by the extra efforts people go through to accommodate me, although I do appreciate those efforts. Sometimes I feel like I then HAVE to eat the item, even though I might not really want to eat it because I'm not hungry or whatever. Also, because I'm an adult, I feel like it is my responsibility to find my own food and not the responsibility of the host/hostess to accommodate my weird food needs.&#038;nbsp;&#060;/p&#062;

				<description>&#060;p&#062;Would you do cookies? We love these chocolate peanut butter cookies (see smudged cookbook page) from the Wild Diet cookbook. I'm sure you could sub regular sugar for the coconut sugar.  Oh She Glows blog is another good source for gluten and soy free options.&#060;/p&#062;
&#060;p&#062;ETA: On second thought, the cookies are fragile, so perhaps not the best to carry to an event.

&#060;p&#062;These aren't brownies, but they are bite sized and easy to carry. &#038;nbsp;I don't *think* there is soy in it, but def. dairy, sugar, nuts. &#038;nbsp;The almond crust is so crunchy and delicious and I actually prefer it to traditional graham cracker crust. I have also tried these with fruit toppings but they just go really well with caramel, maybe because of the sea salt? Hmmm, now that I think about it though, they may be a lot of work if you are making for a significant number of people.&#038;nbsp;

				<description>&#060;p&#062;I will be attending&#038;nbsp; a fun picnic with members of my dance studio the upcoming weekend, and decided to bake and bring some treats.&#038;nbsp; I will making some traditional brownies/bars, but it turns out that a couple of attendees can not have gluten or soy, including soy lecithin typically found in most chocolates.&#038;nbsp; So I am looking for good recipe for some brownies/bars etc. (something that is simple to carry and can be cut in small pieces) that does not include any of these ingredients, nor some very exotic ingredients either - I am happy&#038;nbsp; to get gluten-free flour, though.&#038;nbsp; I have been searching the web and fond some interesting recipes, but I would prefer something that has already been tried by people I trust.&#038;nbsp;&#038;nbsp; I will still bake some conventional treats, this would be in addition.&#038;nbsp; Many thanks!
