Quinoa is my new favourite grain. I am no expert about it but i have learned few things.
Depending upon where you buy sone varietyies needs to washed before use but some can be cooked directly.
( the organic brand i get from costco can be used directly)
Here is how i generally cook it on weeknights
-- i cook the way it says on bag. Super easy. But instead if water i use chicken or vegetable broth. It add ao much flavour to plain quinoa.
Somedays i just add a stock bullion to water and quinoa.
-- in another pot, i add chopped onions. Saute them until translucent.
-add ginger garlic paste. Saute dir a minute.
-- add chopped vegetables ( my go to are: chopped broccoli, diced carrots, mushrooms and olives) and saute a bit more,
-- half a teaspoon cumin seeds
-- dash of cayenne pepper
--- half teaspoon of powder black pepper
And then i add cooken quinoa from other pot. Stir and mix.
At this point in taste for salt, because my broth usually has aome and i add if i need more flavour. And its done.
I also use cooked quinoa to add some body to soups.
Cooked and cooled quinoa can also be used as a salad with your favourite cruncy diced vegetables.
Thats how pretty much i have used. I realy prefer it now over rice. I hope you find a recipe you really enjoy JAileen
