I have really high arches as well. Several years ago, I had to be fitted for orthotics as a result of a running injury. In addition to wearing orthotics in my running shoes, the podiatrist suggested I start wearing Mephisto sandals as a summer sandal. I'm now on my 5th pair. I've worn them for 4 weeks straight sightseeing in Europe as well as long walks all over the downtown core of where I live; I also wear them every day to walk the dog. I pretty much live in them in the summer time and currently have a pair in navy patent leather and brown leather.
Perhaps you have tried Mephisto sandals - I know people who find them too narrow for their foot and other people who find them too wide! However, they have lots of styles available. I've added a photo of mine (taken last night at the beach!) but I know you can also buy them with a strap on the back so your feet don't slide out. Here's a link to another style:

They are initially quite costly, but they last for a long time and to me, they are worth every penny.
