We made a really good potato salad from the "Oh She Glows" cookbook last night, and served it with homemade vegetable soup. The potato salad was made with roasted potatoes and asparagus, and combined with an avocado dressing and green onions. Yum!
Sounds delicious. For fall you must also try her spiced pancakes and especially the pumpkin butter (both on the blog)! Obviously both more treat-like than meals, but so good!
