Was impossible. We ate cereal and fruit for breakfast, so no biggie there. Lunch was always at the Mongolian Wok, so we loaded up our bowls with rice noodles and veggies. However, the black bean sauce was mixed with chicken broth. In the evenings, the only vegan option was the Indian vegetarian meal--night after night. Luckily, they changed up the ingredients a bit so we didn't get bored, and it was filling. We ate the fruit plate for dessert. As for appetizers, we usually ordered veggie sides from the entree menu to avoid creamy soups and salad dressings.

Side note: Carnival is obviously cutting corners with the quality and amount of food in the formal dining room. Very disappointing. We don't overeat, but do like finer foods that are better than what you'd get at the salad bar. Had it not been for the Mongolian Wok, we wouldn't have been able to eat enough veggies. On formal night, we ate fish because the Indian vegetarian entree wasn't offered that night.
