Kirti - I do not peel the potatoes - just kind of grosses me out. It was my grandmother who taught me this trick, she was a very resourceful woman. I just take the potato skin and all and shove it in the toe area and leave it there. I usually check it after about 5-6 hours - take the potato out and try it on. You don't want to over stretch the shoes so it's good to check it more frequently than not. If it's still a bit tight, put the potato back and check it again later, etc. Just know that it only works for stretching width, not length. It really does work!
And please don't eat the potato after (lol)!
